Welcome to My World – Thought I had It – Cookies for Santa
Hello World! Just when I thought I had it, something happened. I appeared to have lost something on my sidebar so I went in & changed the code, thinking the old one expired, but it still shows nothing. So, I know less than I thought I did.
I still have much to learn & I guess my main focus for the new year is to drive traffic to my blog. I need to do this in earnest. I need to be very serious about this endeavor. I will be putting more hours into this. I am determined to make this work; no matter how tech challenged I am. As I said before, the writing comes easy to me, but if I can’t figure out how to draw traffic here, then who am I writing for?
My journey continues. I am a little over a month into writing my blog. The question I have: “Is anyone out there? “And I don’t mean in outer space, but I talk about cyber space. This is how I feel when things don’t happen as fast or as easy as I’d like. Anyone else know the feeling???
Do you think Santa wants Healthy Cookies? Here are some to leave him Tomorrow Night!
Here in the U.S., leaving out a plate of cookies for Santa Claus — & maybe a few carrots for his reindeer — to enjoy after his trip down the chimney is a holiday tradition. Most of us aren’t thinking about our health when choosing which holiday cookies to bake & leave out, but don’t forget that Santa needs good nutrition too. If Santa eats 2 butter cookies at every household he visits, & washes it down with a glass of whole milk, (he probably won’t fit down the chimney for long. 🙂 ) He will consume more than 7 billion calories & more than 3 million grams of fat in just one night!
Instead, why not offer a plate of healthier cookies that you & Santa can enjoy? You can make cookies that are both better for your health & taste great. Ditch the refined sweeteners, artificial food colors, & traditional flours. Replace them with cookies filled with fruit, nuts & whole grains. Don’t worry, healthier doesn’t mean less delicious. Here are 6 cookie recipes to ensure that you won’t have to substitute taste for health. & they’re sure to please the big man in red, too.
Chocolate Dipped Coconut Macaroons
These elegant cookies put nutrient-dense coconut front & center. Traditional macaroons call for egg whites, this vegan version leaves it out & instead relies on the superfood, chia seeds. These coconut delights are then dipped into rich, healthy dark chocolate. They’re healthy masquerading as decadent. Vegan Sugar Cookies
The holiday cookie plate isn’t complete without a few sugar cookies cut into cute shapes & sprinkled liberally with colored sprinkles. Snickerdoodles make the list because they are soft pillows of cinnamon-sugar goodness. Chocolate Covered with a twist to this classic: They’re made with whole wheat flour & a fraction of the sweetness of traditional cookies with an additional option for gluten-free. The recipe calls for sugar or evaporated cane juice. To avoid refined sugars simply choose the evaporated cane juice option.
I had to put a batch of no-bake cookies on the list because they embody both ease of cooking & pack a solid nutritional punch. These no-bake raisin cookies are just that. They’re full of cashews & coconut which are chock full of healthy fats, & sweetened with fiber & potassium-rich raisins. The end result is a soft, sweet chewy cookie that is as healthy as it is tasty. This recipe even offers healthy swaps to keep these cookies good for our health & our budgets. That’s a Christmas win.
Oatmeal Cookies
Gingerbread may be one of the first cookies to appear on the plate for Mr. Claus. These chunky oatmeal cookies have crispy edges, a chewy oat center, & that perfect sweet-spice balance that is the quintessential gingersnap cookie. Featuring fresh & ground ginger, these cookies pack a lovely punch of healthly ginger heat. They’re also made from oats, which means these cookies are gluten-free.
